Strawberry & Apple Budwig Linseed Breakfast (or Dessert)

Low GI, fresh, delicious and sustaining

I’ve just had this for breakfast and it was too lovely not to share. It is also a brilliant way to get all the health benefits from linseed in just one meal.  I eat it because I love it and today is Saturday, I have the place to myself and wanted a treat. Also I have few pounds to lose and I find this breakfast great for weight and appetite control. It is very filling and sustaining; it will easily see me through a long run without anything else to eat until my evening meal. It is a low GI breakfast because of the choice of fruits, all the ground linseed, oil and quark.

Quick, simple and all the healthy benefits of linseed

This is a quick version which uses Flax Farm cold-pressed linseed (flax seed) oil and freshly ground ground linseed which is fine for most conditions – it’s what I and most people use but for serious condition it is recommended you make your Budwig muesli with whole linseeds ground in your own bender just before use.)

Adapt with alternatives it to taste

It’s Budwig muesli at it’s simplest.    More detailed information about muesli fro the Budwig Diet.  I used a Bramley Apple which I prefer but it it is very good with apple. Strawberries are currently at their height of their season but rasberries, blackcurrants, even blackberries all work brilliantly – I always have frozen berries in the freezer to make this breakfast in case I’ve  not any fresh ones to hand. Use whatever sweetener you like best or feel is healthiest for you.

Great for breakfast on the move

This can be made in advance. It can be made the night before, put it in a Tupperware tub or Kilner jar to take with you and eat when you need it .

Ingredients
  

  • 100-120g Bramley Apple or other apple
  • Half Juice of 1/2 a lemon
  • 75 g Sliced strawberries or other berries
  • 75-100 g Fat-free cottage cheese or Greek yoghurt
  • 4-8 tsp Flax Farm Cold-Pressed Linseed (Flaxseed) Oil
  • 2 heaped dessertspoons /25g Flax Farm Linseed Bronze or gold are equally good
  • 1 tbsp whole or ground nuts I like almonds, walnuts and hazelnuts best with this
  • sweetener to taste Stevia, erythritol, maple syrup, honey

Instructions
 

  • Grind nuts if using whole ones and mix with ground linseed, place in cereal bowl.
  • Put apple in a food processor - or grate the apple. Add lemon juice and half of the oil and sweeten to taste. Place on ground linseed and nuts.
  • Blend yoghurt/quark with the linseed oil, add sweetening if you wish. Spoon over apple,
  • Top with sliced strawberries and a few extra chopped nuts and eat immediately - or put it in a suitable container for taking with you for breakfast on the move.

Notes

This was made in a hurry because I was starving hungry and didn't mix the quark and oil as well I I should as can can be seen in the pictures. Made properly, mixed thoroughly with a stick-blender or similar is important in order to get maximum absorption of the Flax Farm cold-pressed linseed oil for the Budwig Diet for serious conditions.
