Possibly the Best-Ever Microwaveable Keto Bread Recipes
Qetomix bread has great texture, great flavour, it’s ultra low carb, keto, paleo, gluten-free and quick and easy to make. It’s also full of great nutrition, good fats (omega-3) protein and tummy friendly fibre. I think I prefer it to the conventional oven cooked version but if you are anti-microwave the oven works fine too. We used a 13cm Pyrex dish covered with cling film to bake (puncture to allow a little steam to escape).

Qetomix Microwave Loaf Recipe
Ingredients
- 105g Qetomix
- 1 tsp baking powder
- Approx 150ml/135g egg white (or mix of one whole egg and two egg whites)
- 50ml sparkling water
- 1/2 tsp Salt for seasoning
Method
- Measure out the Qetomix into a small mixing bowl.
- Add 1tsp of baking powder and 1/2 tsp salt (or more according to your preference)
- Measure out the egg white & whisk until it stiffens.
- Add the dry mix to the egg whites and fold in, then add water and mix together.
- Place the ‘dough’ into a greased microwaveable dish with a lid/cover with cling film (this helps the rising process using steam) & microwave on med-high for 4-5 mins.
- Check and if needed bake for a further 1 to 2 mins (check it has baked through to the middle).
Mediterranean Olive Qetomix Bread Recipe
Ingredients
- 105g Qetomix
- 1 tsp baking powder

- 35g Chopped olives green and/black
- 1/2 tsp Mediterranean herbs (optional)
Method
- Measure out the Qetomix into a small mixing bowl.
- Add 1tsp of baking powder and 1/2 tsp salt (or more according to your preference)
- Add the chopped olives to the Qetomix.
- Measure out the egg white & whisk until it stiffens.
- Add the dry mix to the egg whites and fold in, then add water and mix together.
- Place the ‘dough’ into a greased microwaveable dish with a lid/cover with cling film (this helps the rising process using steam) & microwave on med-high for 4-5 mins.
- Check and if needed bake for a further 1 to 2 mins (check it has baked through to the middle and firm to touch).
Super Seedy Greek-style Qetomix Bread Loaf
Ingredients
- 105g Qetomix
- 1 tsp baking powder
- Approx 150ml/135g egg white (or mix of one whole egg and two egg whites)
- 50ml sparkling water
- 1/2 tsp Salt for seasoning
- 1 tablespoon sesame seeds
- 1 tablespoon nigella seeds
Method
- Measure out the Qetomix into a small mixing bowl.
- Add 1tsp of baking powder and 1/2 tsp salt (or more according to your preference)
- Measure out the egg white & whisk until it stiffens.
- Add the dry mix to the egg whites and fold in, then add water and mix together.
- Use a generous portion of olive oil to grease the microwaveable dish.
- Add approx 3/4 of the seeds to the dish to create a seed ‘lining’ on the bowl.
- Place the ‘dough’ into the prepared microwaveable dish & top with the rest of the seed.
- Cover with a lid or cling film (this helps the rising process using steam) & microwave on med-high for 4-5 mins.
- Check and if needed bake for a further 1 to 2 mins (check it has baked through to the middle).
