Poached Apricots over Ground Golden Flaxseed, delicious and perfect for breakfast or dessert, just 2 ingredients

Poached apricots with Ground golden flaxseed

I was so amazed that two healthy ingredients could make such a delicious breakfast that I had to share it.  It is also a great, weekday healthy dessert.

Cooked apricots served warm or room temperature over Flax Farm Ground Flaxseed and just a tad of vanilla extract, if you have it, is sublimely delicious, perfect for breakfast or dessert.  It’s nutrient-filled, has lots of health benefits and about as healthy a breakfast or dessert as you can find. It is rich and  gorgeous like a moist sponge dessert, Perfect as it is but you can add Greek yoghurt, preferably enhanced with Flax Farm Flaxseed Oil.

Alternative fruits

Apricots aren’t always available, peaches, nectarines and plums make  excellent alternatives. Apples, strawberries and rhubarb can all be poached and also taste amazing and are low in sugars.

Part of a healthy diet

A helping of 4 Apricots offers loads of nutrients but is less than half the carbs and sugars in a bowl of muesli or typical breakfast cereal but has more than double the fibre so advantageous .

  • Net carbs: 12 grams
  • Protein: 2 gram
  • Fat: 0.54 grams
  • Fibre: 4 grams (half of which is soluble fibre)
  • Vitamin A: 16% of the Daily
    Value (DV)
  • Vitamin C: 16% of the DV
  • Vitamin E: 8% of the DV
  • Potassium: 8% of the DV

Add that to 2 tablespoons, 25g  of Flax Farm Ground Flaxseed, which provides even more fibre, a good helping of protein, lignans for lots of antioxidant power and of course flaxseed oil which contains more than 5g omega-3 in each bowlful.

Poached Apricots with Ground Golden Flaxseed

Ingredients
  

  • 200 g Apricots - approximately 4 small
  • Water
  • 25-30 g Flax Farm Ground Gold Flaxseed Bronze tastes great too but doesn't look as pretty
  • 1/2 Tsp vanilla extract Optional
  • Honey, or a few drops stevia liquid or other sweetener if required Optional because you may find it sweet enough
  • Greek yogurt Optional

Instructions
 

  • Place apricots in a saucepan, cover with water, cover with a lid, bring to the boil and simmer for approximately 15 minutes or until soft. Remove from heat, add about 1/2 tsp vanilla extract, sweeten to taste if requiredallow to cool to just warm or room temperature.
  • Place ground flaxseed in a bowl and top with the warm or room temperature poached apricots. Leave to soak for a few moments and enjoy.
  • Top with a dollop of Greek yoghurt beaten to a cream with Flax Farm Flaxseed oil
