My best warming breakfast and a lovely pudding
I like to avoid all grains and refined carbs. This is simple, delicious, slimming, paleo, gluten-free, low GI, naturally free from.
This and its variations is my all-time favourite breakfast; I love it every time I eat it. Also it is a nice guilt-free, health breakfast that I found it has been helped me lose weight and keep it off. It is really sustaining and has plenty of vegetarian protein.
Any excuse and I have it for pudding. It makes an attractive warm dessert for people who would normally want crumble with their stewed apple!
Lots of good nutrition
Apple, berries provide at least two of you five a day, plus vitamin E from nuts as well as lots of polyphenols, linseed gives you good fats, approximately 9g omega-3, lots of digestion-friendly fibre soluble and insoluble, lignans and protein. Add ginger and/or cinnamon and you get all their reputation for all sorts of health benefits,
A great dessert
Try it for pudding too and, not that it needs it at all but some people might like some cream or or a dollop of ice-cream with it.

All the things it doesn’t contain just make the lovely light ingredients taste even better and you don’t miss that sugary, starchy, gluten-laden, high carb cereal based stuff.
Variations
You will never get bored with this breakfast because you can vary it so much. Using a different variety of apple eating apples and cookers all work, Or you can makes this with almost any fruit: pears, peaches, plums, apricots either fresh or dried are great. Use a single variety of berry – or cherries or raisins or pomegranate seeds or just a different mix of berries. Try vanilla extract for a rich custardy taste or cinnamon for all its flavour and health benefits. Try different nuts, try seeds, even coconut instead of nuts – try toasting your nuts or seeds first; toasted shredded almonds are great when you are serving this as a dessert. You can use yacon syrup instead of honey. Use coconut or other milk or juice for poaching the apples or other fruit.
A porridge of linseed, apples and berries (grain-free)
Ingredients
- 1 Small apple I prefer apples.
- 50-75 g berries I use frozen through winter and fresh in summer
- 20-25 g Flax Farm Gold Ground Linseed (flax) bronze is just as good
- 25 g chopped nuts chopped
- 1-2 tsp grated fresh ginger optional, you can use dried ginger but much less
- sweetener to taste optional - I use stevia extract
- 1 tsp honey optional
- 1-3 tsp Flax Farm cold-pressed linseed oil optional
- 150-200 ml Water
Instructions
- Core and roughly chop apple, don't remove peel. Almost cover with water in suitable bowl or container.
- Cook, in oven in saucepan or microwave until the apple is soft and cooked. About 4 minutes in microwave 10 minutes in sauce pan or 10 in oven.
- Remove from heat, add grated ginger if using and any other spices and whatever you are using for sweetening. And stir through the cooked apple.
- Now add ground linseed, linseed oil if using, and stir again. Top with berries, chopped nuts and drizzle over a teaspoon of honey.
- Now enjoy.
