When I don’t have any eggs to hand I am pleased to revert to a fat-free healthier option and use chickpea flour as an alternative. I use a coarse ground chickpea flour called maghaj but gram flour works just as well.
I love nutritional yeast, it’s very tasty and low calorie. It is fat-free, full of vitamins, high in fibre. has lots of protein and it has a lovely cheesy flavour. It also has a long shelf life so you can always have some in the cupboard as a standby for recipes like this, Nutritional yeast and real Parmesan or grated cheddar work equally well.
"Cheesy" Drop Scones
These quick drop scones are a great alternative bread when you need a roll with a bowl of soup or salad. Straight out the pan, maybe a wipe of butter or spread, they are crispy and cheesy on their own and make a tasty healthy snack. Good for lunch boxes too.
Ingredients
- 30 g Flax Farm Gold Ground Linseed
- 30 g Buckwheat flakes or flour
- 15 g Engervita Nutritional Yeast flakes Parmesan or other cheese works just as well
- 100 ml Water approx
- 5 ml Soy sauce
- 1-2 Tsp chopped freshy herbs optional
- 1 tsp baking powder optional
- 1 pinch Salt optional
- 30 g Chickpea flour
Instructions
- Combine all the ingredients very thoughtfully until smooth, slowly adding enough water to make a stiff batter
- Place tablespoonfuls onto a fairly hot greased frying pan. Cook until well set and slightly brown. Then turn over
- Cook on second side until brown and cooked through. Remove from pan and serve. Great with butter or on their own.
