Luscious dessert, healthy sustaining breakfast
This is as gorgeous as any trifle or Eton Mess dessert but light enough to have as a healthy grain-free muesli for breakfast every day and with two tablespoons per portion of ground linseed this is a really sustaining breakfast.
Healthy, low GI, saturated fat-free (dairy-free, grain-free)
This recipe suits most free-from needs. It is gluten-free, grain-free, saturated fat-free, dairy-free vegan and paleo. It is rich in tummy-friendly fibre and relatively low GI. Instead of cream we use Linseed Banana Cream which has less than half the calories of dairy cream.
Endless variations, fruit, berries, seeds, nuts, spices
Enjoy it with the fruit that’s in season, in the freezer or whatever takes your fancy. Vary nuts according to taste or use ground mixed seeds if you prefer or have a nut allergy.
Just as good with cooked fruit or even poached dried fruit.

Ingredients
- 200 g berries fresh or frozen or any other fruit
- 5 Tbs Ground nuts Any or mixed pumpkin seed, sunflower seeds etc
- 2 Tbs Flax Farm Ground Golden Linseed or Bronze Ground Linseed
- 1-2 Bananas
- 2-3 Tbs Flax Farm Cold-Pressed Linseed (Flaxseed) Oil
- A few drops Vanilla Essence Optional
- Stevia, honey or other sweetener Optional to to taste
- 1-2 Tbs Juice Optional
Instructions
- Make up cream by blending banana, linseed oil, sweetener and vanilla essence (or other spices) as in www.flaxfarm.co.uk/recipe/dairy-free-linseed-banana-cream/ recipe
- Place ground nuts in bottom of individual bowls. Sweeten berries or fruit to taste and place over nuts Top with banana "cream"
- Serve and enjoy
