Instructions
Place apricots in a saucepan, cover with water, cover with a lid, bring to the boil and simmer for approximately 15 minutes or until soft. Remove from heat, add about 1/2 tsp vanilla extract, sweeten to taste if requiredallow to cool to just warm or room temperature.
Place ground flaxseed in a bowl and top with the warm or room temperature poached apricots. Leave to soak for a few moments and enjoy.
Top with a dollop of Greek yoghurt beaten to a cream with Flax Farm Flaxseed oil
